In short, a bento box is an upgraded lunch box and a Japanese kitchen staple. These lunch boxes are designed with compartments for each piece of your meal. The portions are meant for one serving (typically lunch) and consist of all the major food groups. You can try a vegan bento box for a 100% plant-based meal or change up the flavor and ingredients with a curry bento box, vegetarian bento box, Mexican bento box, and a Japanese-inspired bento box. No bento box? No worries. You can pack up each piece of the meal in separate reusable containers (the old school way) or use crisp lettuce leaves to keep each dish separate. Some notes about the ingredients: Sesame oil: You'll need sesame oil to brown the chicken. I recommend using light sesame oil here as it cooks similarly to canola or vegetable oil. Dark sesame oil has a very low smoking point and isn't recommended for high heat cooking.Chicken: You can use a boneless chicken breast or a boneless chicken thigh. If the piece of chicken is on the larger side, thin it out to an even 1/2″ to 1″ thickness.Teriyaki sauce A simple mixture of soy sauce, raw brown sugar, rice vinegar, and fresh ginger captures the flavor of authentic teriyaki sauce.Sesame seeds: To sprinkle over the top.Spicy edamame: For the full recipe, head to my easy edamame guide.Rice: I like using brown rice for the added fiber and nutrients, but feel free to use steamed white rice instead (1/4 cup of uncooked rice per bento box).Salad: The salad is a simple mixture of salad greens, radish, and sesame seeds tossed in a sweet and tangy dressing.Dressing: The dressing is a sweet, salty, and tangy vinaigrette made from sesame oil, rice vinegar, soy sauce, and raw brown sugar. Prepare this chicken teriyaki bento box in just a few easy steps. How to Prepare Chicken Teriyaki
Heat the oil: Heat sesame oil in a large skillet over high heat until hot but not smoking.Cook the chicken: Add the chicken and brown for 3 minutes on each side. Remove from the pan and set aside.Make the teriyaki sauce: In a small bowl, whisk the soy sauce, brown sugar, rice vinegar, and grated ginger together.Thicken the teriyaki sauce: Add the sauce to the same skillet and bring to a boil. Let it boil until it thickens (1 to 2 minutes).Finish the chicken: Then, add the chicken and its juices back to the skillet and cook until the chicken is done and the sauce is nice and sticky (about 2 to 4 minutes).Let the chicken rest and slice: Transfer the chicken breast to a cutting board and let it rest for a few minutes before slicing. How to Prepare the Edamame and the Salad
Prepare the spicy chili edamame: After rinsing the frozen edamame beans, add them to a saucepan of boiling water and boil for a few minutes. When finished, drain the edamame well, and let them cool. Then, sprinkle with sea salt and chili flakes.Make the salad dressing: Whisk the rice vinegar, soy sauce, sesame oil, and water together in a small bowl. Set the bowl aside.Toss the salad: In another bowl, add the mixed greens, radish, and sesame seeds. If you aren't eating this right away, store the salad and dressing separately. When it's time to eat, pour the dressing over the top of the greens and toss to coat every bite in dressing. How to Assemble This Bento Box

If you want to swap in different sides, go for it! Fresh cucumbers, crunchy sugar snap peas, coleslaw, and pickled veggies are great options.Sprinkle with furikake seasoning! Chicken Teriyaki
Heat the oil in a large frying pan over high heat.Add the chicken and let it brown for 3 minutes on each side, then remove from the pan and set aside.Combine the sauce ingredients and pour into the pan.Let the sauce come to a boil and cook for 1-2 minutes until it starts to thicken. Then add the chicken and its resting juices back into the pan.Cook for 2-4 minutes, turning it quite often until the chicken is cooked through and the sauce is nice and sticky.Remove from the heat, let it rest for a few minutes, and cut into slices. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and water and set it aside.In another bowl, toss the mixed salad leaves, radish, and sesame seeds together with the dressing (see note 1). Bento Box Assembly
