It was easy, cost efficient, and used simple ingredients. But somewhere along the way, mayonnaise became something you "had" to buy at the store. That lead to mass production, and that of course lead to using cheap ingredients that just aren't that good for you. Let's change that. What Is Mayo Anyway Basically, it's egg yolks, a little vinegar, olive oil, and a few spices. Or at least it used to be. Today, your store-bought mayo may contain cruddy soybean oil, sugar, high fructose corn syrup, added starch, and preservatives. And the "light" versions often just reduce the fat and replace some of it with extra water and sugar. What if the label says "made with olive oil"? That just means there's a smidge of olive oil in there and the rest is a cheap junk oil. Health It Up Here's how to whip up your own mayo made with quality stuff. Ingredients 2 egg yolks 1 tablespoon red wine vinegar 1 teaspoon of Dijon mustard 2/3 cup or 6 ounces extra virgin olive oil Dash of white pepper (black pepper is fine too) Dash of salt Squeeze of lemon juice (optional) Directions You'll need either a food processor or a whisk. Place all the ingredients in the food processor or bowl except for the olive oil. Turn on the food processor or start whisking. With the machine running or your whisk whisking, gradually drizzle in the olive oil. This should take a couple of minutes. You should notice the mayo starting to thicken. Continue whisking/food-processing until you like the consistency. This recipe makes about one cup and it'll last for a week or so in the fridge. Spice It Up Add diced chipotle peppers, garlic, and lime juice for a spicy mayo. Add some soft avocado if using a food processor.
