Want to learn simple secrets to get junk-food-loving family members eating good food? Take a look at Jessica Seinfeld's book,"Deceptively Delicious" (Collins Living, 2007). Even before knowing about her book, I had incorporated some of the same ideas into my own cooking to reduce calories. For instance, I use puréed fruit (usually applesauce or bananas) in baked goods in lieu of oil. The flavor is enhanced by the substitution even as the calories are lessened and the nutrition enhanced. But Jessica takes the idea even further. Besides fruits, she suggests puréeing avocados, beets, broccoli, squash, carrots, cauliflower, peas, red bell peppers, spinach, sweet potatoes, and zucchini. Jessica begins by explaining the "how to" of puréeing vegetables and fruits. She then provides wonderful recipes that integrate the purées into foods most kids love. For example, she makes spaghetti sauce that includes sweet potato purée and gingerbread spice cake with carrot and broccoli purée. Her premise is simple: Food can be healthy and delicious!
