There are so many reasons to go vegan, even if it's just for a week or a month! For most people, loving animals justifies the choice. Some people want to start a healthier lifestyle, and combining a challenge like Veganuary with their New Year's Resolution is a great way to start the year. Eating less meat and animal products will definitely help you to pack your diet with fiber, vitamins, minerals, and healthy fats. If you follow a plant-based diet, you will be eating lots more foods that are good for you: vegetables, fruits, whole grains, beans, and nuts.

But by going vegan, you are not only helping yourself: you are helping the environment too! The production of meat and other animal products, like dairy, places a heavy burden on the environment. Notes

Tip 1

Prep as much as you can during the weekend (wash, clean and cut your veggies). This will help you make as little as possible each night. This way, your dinner prep time will be cut to a minimum, and you will be able to enjoy some free time.

Tip 2

Please keep in mind that most recipes are for 4 servings. You will need to increase or reduce the grocery list accordingly.

These recipes look wonderful and inspiring. I’ll take this list shopping and get started. I don’t put meat in my shopping cart (but still dairy and eggs) but when I get home….end up eating peanut butter sandwiches, burritos, salads and pasta over and over. After seeing videos of how animals are treated in these places, I stopped buying all animal products including products that are made with animals. BMW just came out with an all vegan car and if I ever get a car again, I totally want to try going for that car! So getting off topic, haha. I am a huge fan of tofu, so I will vote the Kale Stir-Fry with Crispy Curried Tofu as my favorite (by picture) so far. But all of them look fantastic! Speaking of vegan, my friend was on this diet and he told me how GREAT he felt. He said he felt more energized and just overall healthier being on the diet. He was on it for a few months. Also, random off-topic… but since you were speaking about vegan, a lady on the bus this morning harassed me for wearing a Canada Goose jacket… she was saying I am a cruel person and harsh to animals… OH man, I did not know how to respond to her!! And yes, a vegan diet is great! I have to be honest and after a month I struggle and need to cheat with a bit of cheese here and there, but it’s definitely a great choice for your health and for the planet! On the off-topic point, sorry to hear that! It must have been awful! A Canada Goose shop opened in London last weekend and there were quite a lot of people protesting outside! I didn’t know how they treated animals before reading their leaflet! Reply
