Ingredients you ll need

These addictive spicy cashews require just a handful of ingredients: Cashews: Cashews are a great source of protein, healthy fats, and fiber, perfect for helping you feel full. Make sure to use raw unsalted cashews, as we'll be roasting them in the oven.Smoked paprika: Smoked paprika adds smokiness and heath, giving the cashew nuts an irresistible flavor.Ground turmeric and a pinch of pepper: Turmeric, with its earthy and peppery flavor, adds even more depth to these cashews. And it'll add a dose of antioxidants to your daily snack! Add a pinch of black pepper powder to make sure you get all its anti-inflammatory benefits.Ground cumin: For its slightly sweet, warming flavor, with a touch of extra nuttiness.Salt: I used sea salt flakes.Olive oil: You don't need much. I used a tiny amount just to help the spices stick to the cashews. A quick note: In this recipe, I indicated the amount of spices I used, but spices' flavor can change dramatically depending on how fresh they are. So always make sure to taste your cashews and add a bit more if your spices have been sitting in your kitchen pantry for a while!

How to make roasted spicy cashews

Preheat the oven to 350 F (180 C).Season: Line a large baking sheet with parchment paper. Add the cashews, olive oil, and all the spices, and mix well with a spoon or your hand until all cashews are evenly covered. I mix everything on the baking tray, as I don't like having too many things to wash up, but you can add everything in a small bowl to mix if you prefer. Spread the cashews as a single layer for perfect roasting. Bake: Bake the cashews for 10-12 minutes, mixing them a couple of times to make sure they bake evenly. Once golden brown, remove them from the oven and let them cool at room temperature before eating them.

How to store roasted cashews

These spicy cashews are a great snack to meal prep ahead of time as they last for a while. The cooled cashews can be stored in an airtight container, a mason jar, or a ziplock bag for up to 2 weeks. It's best if you can keep them in a cool dark place (like a kitchen drawer or a cupboard). But do not keep them in the fridge as it's pretty humid, and the nuts can become soft.

Best spices to use

Cumin, turmeric, black pepper, and smoked paprika are a great combination for this recipe. But you can use your imagination and substitute any of these ground spices for any spice mixture made with what you have in your kitchen. Some other great alternatives are cayenne pepper, chili powder, curry powder, or garam masala.

Sweeten it up a bit

For a more sweet and spicy cashews version of this recipe, you could add 1 tablespoon of maple syrup to the mix.

What do you mean by raw cashews

Raw cashews are nuts that haven't been toasted or seasoned. They've been removed from their shells and sold without any alteration.

How long to roast nuts for

Nuts can burn quite quickly. As soon as you turn your head around, they are gone! So make sure to keep an eye on them and remove them from the oven as soon as they become slightly golden. For me, that usually takes 8 to 10 minutes. Also, if you roast your nuts for too long, the healthy fats they contain can oxidize, making them not as good for you. So avoid roasting them for more than 20 minutes.

Dry roasting

If you can't be bothered to turn on the oven, you can dry roast the cashews in a frying pan on medium heat, making sure to turn them around frequently to avoid burning them.
