You can make it a few days ahead and it freezes well, so double the recipe for a batch for a rainy day. I sometimes add a crumble of crispy pancetta on top, too. Dora Kazmierak GET THE RECIPE Kale bean and winter roots soup My gorgeous friend, florist Nikki Tibbles, has the most beautiful house in the country and I have been lucky enough to spend many weekends there. This recipe is inspired by one of her soups, which she makes every weekend with whatever seasonal vegetables she has. I use shop-bought wontons as there are so many good ones readily available. This is my 10-minute go-to midweek supper, and you can add any green vegetables that you have to hand. Double or treble this recipe – it will keep in the fridge for a week or in the freezer for a couple of months. I have added a topping of toasted almonds. You could use hazelnuts, brazil nuts or pine nuts instead, and replace the wild garlic with spinach or watercress. It’s a foolproof recipe that you can make without too much effort when you get home from work. You can swap the pak choi with lots of other greens, such as kale, spinach, chard or even frozen peas.
