It is a good source of manganese and contains iron, vitamin B6, fibre, copper and potassium. Curcumin is the principle active ingredient in turmeric and gives it its vibrant colour. Add black pepper to any dish prepared with turmeric for better absorption as it contains piperine, a natural substance that enhances the absorption of curcumin by up to 2000%. Peter Cassidy SERVES 6 450g butternut squash, peeled and cut into 3cm chunks 2 tablespoons olive oil 60g spinach 4 spring onions, finely sliced 12 large eggs 1 teaspoon ground turmeric ½ _teaspoon freshly ground black pepper chilli flakes or pul biber (optional) 1. Preheat the oven to 180°C/gas mark 4. 2. Spread out the butternut squash on a roasting tray, drizzle with the oil and season. Roast for 20–30 minutes. 3. Remove from the oven and mix together with the spinach and spring onions in a large bowl. Divide the vegetables between the holes of a 12-hole muffin tray. 4. Whisk the eggs, turmeric, pepper and chilli flakes together in a bowl. Pour over the vegetables in the muffin tray. 5. Reduce the oven temperature to 150°C/gas mark 2 and bake the muffins for 30 minutes until they are puffed and golden. 6. These can be also be served with lean grilled bacon, if you wish. They will keep for a couple of days in the fridge.
