Let us introduce you: it is said to be one of the world’s finest pudding wines, and it hails from the Sauternais region of the Graves section in Bordeaux. This peaches in sauternes recipe capitalises on the flavours of this sweet, fruity wine and transforms them into a decadent dessert that tastes absolutely heavenly – and it’s low in calories too, with just 220 per bowlful. A dollop of crème fraîche and a scattering of roughly chopped pecans elevate this dish even further – serve it to guests at your next dinner party and watch everyone’s faces light up from the very first bite. If there is a better way to use up seasonal summer fruit, we haven’t come across it yet. Laura Edwards SERVES 6 220 CALORIES PER SERVE 250g caster sugar pared zest of 1 lemon 1 vanilla pod, halved and seeds scraped out 375ml sauternes wine 5 medium best-quality ripe peaches, sliced into wedges 150g crème fraîche 70g pecans, roughly chopped 1. Place the sugar, lemon zest, vanilla pod and seeds in a saucepan over a medium heat and simmer until the sugar is dissolved. Allow to cool completely then stir in the sauternes wine. 2. Place the peach wedges in a large, clean jar and pour over the syrup. Cover and leave overnight to allow the flavours to infuse. 3. Serve the peaches and juice with a dollop of best-quality crème fraîche and a few roughly chopped pecans. TIP Any leftover syrup is delicious used in cocktails, or can be frozen to make a boozy ice lolly or granita.
