From Modern Baking by Donna Hay MAKES 12 300g self-raising flour 175g light brown sugar 40g desiccated coconut 25g cocoa powder, sifted 250ml milk 125ml vegetable oil 2 medium eggs, lightly beaten 2 tsp vanilla extract 200g dark chocolate (45-55 per cent), chopped 1. Preheat oven to 180C/gas 4. Line 12 x 125ml-capacity muffin tins with paper cases. Place the flour, sugar, coconut and cocoa in a large bowl and mix to combine. 2. Add the milk, oil, eggs, vanilla and chocolate and mix until just combined. Spoon into the tins and bake for 20 minutes or until cooked when tested with a skewer. 3. Allow to cool in the tins for 5 minutes before placing on a wire rack to cool completely. Modern Baking by Donna Hay will be published by Fourth Estate on 18 October, price £30.
