Platinum Jubilee party baking recipes Giant bourbon biscuits Rather like giant dominoes, these sandwich biscuits with a rich chocolate filling are a British classic loved by all ages. Homemade bourbons were always popular in the royal nursery. John Kernick GET THE RECIPE Lemon and thyme cake Made with yogurt and olive oil, this is incredibly light and moist. It is drenched in an aromatic, thyme-infused lemon syrup, which, once cool, forms a delicate, crisp sugary shell. Served with an abundance of berries, it makes a wonderful centrepiece for an afternoon tea in the garden. The aroma of fresh thyme will always bring back indelible memories of the gardens at Highgrove and of the joy of being able to pick fresh herbs moments before they were needed for a cake. John Kernick GET THE RECIPE Rhubarb and white chocolate tartlets In this recipe, thin, crisp, golden filo pastry shells are filled with unctuous white-chocolate vanilla mousse and topped with tart rhubarb – a heavenly marriage of crunchy, creamy and tangy. Harry and Meghan served rhubarb tartlets at their wedding, which recalled a little taste of Harry’s childhood and the wonderful rhubarb grown at Highgrove. John Kernick GET THE RECIPE Strawberry bunting cake There is no cake more regal. It was originally made for Queen Victoria, during whose incredible 63-year reign the tradition of afternoon tea began to evolve. And during the 70-year reign of Queen Elizabeth II, the tradition of afternoon tea is ever more popular. Queen Victoria would have had her cake with raspberry jam and topped with a sprinkling of granulated sugar. I have filled this one with strawberry jam and topped it with berries and a few fresh rose petals, then added some celebratory mini bunting. John Kernick GET THE RECIPE Raspberry swirl meringues These small, rustic meringues have a thin, crunchy shell and a soft, chewy, marshmallow-like centre. The freeze-dried raspberry powder imparts a refreshingly sharp hit of flavour that cuts through the sweetness. John Kernick GET THE RECIPE Chilled lime tartlets These refreshing tartlets take minutes to make and are perfect for an alfresco summer afternoon tea.
