Chris Terry Apricot & almond pastry swirls As long as you have a packet of puff pastry in your fridge or freezer, you have a rather impressive breakfast option at your fingertips. Chris Terry GET THE RECIPE Toasted quinoa salad & piri-piri dressing Quinoa has a reputation for being a bit dull, and that’s because it is! So here I’ve jazzed it up with a lot of other ingredients and finished it with a spicy dressing. This would make a good accompaniment for grilled merguez sausages or barbecued chicken. Chris Terry GET THE RECIPE Portuguese chicken coriander & garlic soup I first had a version of this in an unassuming little restaurant just outside Lisbon. I didn’t realise how tasty such a simple soup could be. Bold herbs, plenty of garlic and a great stock. Chris Terry GET THE RECIPE Beef cheek burgers with mushroom mayo & pickles Possibly the best and filthiest burger I’ve ever made! It takes a bit of time and effort as beef cheek needs a long, slow cook to become tender but, believe me, it’s well worth it. Chris Terry GET THE RECIPE Rack of lamb with charred broccoli ricotta grilled chilli & anchovy I could eat ricotta all day, and a well-made one is like nothing else. Westcombe Dairy in Somerset makes a fantastic one, and it’s well worth seeking out on its website (westcombedairy.com). You will need to drain the ricotta the day before. Chris Terry GET THE RECIPE Torte with chocolate & almond cream A great combination of rich, decadent chocolate, fresh fruity raspberries and the crunchy bite from the hazelnuts. A really special dessert to round off the evening. Chris Terry GET THE RECIPE Roast butternut squash with pancetta gruyère & parmesan cream A rather decadent way to dress up a butternut squash. Bacon or pancetta and cheese seem to be regulars in my recipes, and I’m unapologetic on this point – they do make everything taste better! Chris Terry GET THE RECIPE Crab scones with apple and fennel salad Brown crabmeat is often overlooked but this is where all the best flavour is. These scones are a doddle to make and are pretty impressive as a snack or starter. Double up the ingredients if you’re going to make them, because they won’t last long!
