Are you a die-hard pad thai enthusiast? Perhaps you love yaki soba, or worship at the altar of katsu curry? Either way, enjoying your favourite dish just got a whole lot easier with the arrival of Wagamama’s new Feed Your Soul cookbook. Fifteen years after the launch of the original Wagamama recipe guide, Feed Your Soul shares even more step-by-step guides to some of the chain’s most popular, flavourful dishes – including that katsu curry. Getty Images ‘I remember standing outside Tokyo’s Tsukiji market and ordering a ramen,’ recalls global executive chef Steven Mangleshot. ‘The dish was made with only four or five ingredients. I was blown away by the flavours, the silky rich broth and the perfectly cooked noodles which had a bit of bite. This is what made me fall in love with Asian food and that’s the spirit we keep alive in Wagamama today.’ Of the recipes, he adds: ‘Some will be perfect for relaxed weekends, when you have a little more time on your hands and others can be whipped up in minutes, perfect for a midweek meal. All you need are the fresh ingredients, a healthy appetite and a little pride. The rest is pure enjoyment.’ Chopsticks at the ready.. Bang bang cauliflower ‘Bang Bang Chicken’ is traditionally served in China as a street food snack and is so-called because of the method of tenderising the chicken with a hammer before it’s coated in a spicy sauce and fried. We’ve created a plant-based alternative. The flavour of the sauce is sweet, salty, smoky and spicy and makes a perfect side dish. For more protein, this dish works well with the addition of tofu. We’ve created this version for you to make at home, which is close to our original, but the only way to experience a Wagamama katsu is, of course, in our restaurants.
