Dark chocolate date and nut fridge cake bars Adrian Lawrence MAKES 8 319 CALS (257 IF CUT INTO 10, 217 IF CUT INTO 12) 200g 85% dark chocolate, broken into squares 50g salted butter 1 tsp vanilla extract 100g dates, roughly chopped 100g mixed nuts, roughly chopped 1. Melt the chocolate and butter together then stir in the vanilla, dates and nuts. Pour the mixture into a small lined dish (we used one that measures 20cm x 15cm), cover and leave to set in the fridge for 1-2 hours before cutting into pieces. Ginger baked plums with yogurt Adrian Lawrence SERVES 2 98 CALS 4 plums, halved and destoned 2.5cm chunk of ginger, finely grated 50g full-fat live yogurt 1 tsp vanilla extract 1. Preheat the oven to 180C/160C fan/gas 4. 2. Put the plums in a small baking dish and scatter over the ginger. Bake in the oven for 20-25 minutes until soft. Stir the yogurt and vanilla together and serve on top of the plums. Frozen mango kefir sorbet Adrian Lawrence SERVES 2 124 CALS 100ml kefir 100g frozen mango flesh 1 large peeled, frozen banana 1 lime, zest and juice 1. Put all the ingredients in a blender and blitz until smooth. Freeze for 1-2 hours before scooping into bowls.
