Clodagh McKenna’s stunning dishes can be made in as little as 10 minutes (yes, really). Dora Kazmierak The missing ingredient It’ s time by Clodagh McKenna As a chef I talk to people about food every day – in person, on Instagram and even in the street. They give me recipes, tell me their food preferences and where to buy the greatest ingredients. But the number-one topic is time – more specifically, how little they have, and how that affects what they cook and when they cook it. I feel so passionate about helping all of us to cook more regularly. It improves everything in our lives – physical and mental wellbeing. No matter how hard my day is, I give myself a little gift of a home-cooked meal at the end, because it will always make me feel better. So I decided to write a book which is focused on time. In Minutes is packed with 80 flavourful, speedy recipes that you can cook from start to finish in 10, 20 or 30 minutes, from creamy forest pasta to nutty chicken or Singaporean pepper prawns. Soon they’ll be your weekly staples. I hope you enjoy the recipes and that they make your daily cooking more delicious, fun and easy. Just make sure to pop on your favourite disco tunes and have fun while you’re cooking! Singaporean black pepper prawns Fast, fiery and juicy prawns along with rice and pak choi to make a more substantial supper. If you use pre-cooked, microwave rice, then this dish will take just 10 minutes to make. Dora Kazmierak GET THE RECIPE Corn chowder with crispy bacon This right here is a big bowl of sunshine! It’s hearty enough to have as a supper as I’ve added diced potatoes for more texture and chunkiness. What makes the soup a little thick is the addition of flour – you can use gluten-free flour if you prefer. Dora Kazmierak GET THE RECIPE Nutty chicken Delicious chargrilled chicken and an addictive peanut sauce that takes just 5 minutes to make! Coconut rice partners so well with the satay flavours. Dora Kazmierak GET THE RECIPE Turbo tempeh tacos Family taco night in just 20 minutes! I am using a vegan alternative in these tacos called tempeh, which is a plant-based protein that originated in Indonesia. It’s made from fermented soya beans that have been formed into a block. Unlike tofu, it has a meaty, firm texture and yummy nutty flavour. Dora Kazmierak GET THE RECIPE Hasselback halloumi with tomatoes olives & capers Crispy ridged halloumi in a bath of salty, olive-y, fiery, aromatic tomato sauce creates such an amazing mouthful! I use rosemary in the sauce, but you can swap it out for mint, basil or dried oregano. Dora Kazmierak GET THE RECIPE Creamy forest pasta If it’s chilly outside, you’ve had a long day and come home to hungry faces, then this is what you should make: a big-flavoured, comforting pasta that is so stress-free you’ll be dancing while you make it (something you should definitely do!). Dora Kazmierak GET THE RECIPE Rapid salmon ramen This is my go-to dish when I want a warm bowl of something healing, comforting and also guilt-free, that I can make in 10 minutes. I use the miso mix that comes in a packet with the noodles just because I don’t really use miso in anything else – but if you do then you can just use ramen noodles and add 1 teaspoon of miso paste. Add whatever green vegetables you want. Dora Kazmierak GET THE RECIPE Moroccan spiced lamb Lamb chops or cutlets are such a brilliant quick-fix supper as they only take about 8 minutes to cook and really hit the spot! I love spicing them up with this yogurt marinade. It does two things – packs the lamb with flavour and also tenderises the meat, so this is definitely a step not to be skipped. If you don’t have any yogurt just leave it out, and if you don’t have harissa just use a teaspoon of smoked paprika instead.
