The festive season is fast approaching so I’ve gathered together a bunch of wonderfully delicious, exciting recipes to see you through that Christmas countdown and all the way into the New Year (and beyond!) So what’s new, you ask? Well, this year I’m mixing things up so our humble veggie friends move from the sidelines to the main event – I’m talking beautiful veg as the centrepiece of a cracking festive feast, and that’s just where they belong! Yes, I’m a meat lover who will absolutely not compromise on flavour, but I also want to show you just how truly delicious and joyful a veg-based Christmas can be. These recipes aren’t pitched only at vegetarians, they’re for everyone to enjoy. Alun Callender For me, 2019 has been all about veg, and what an eye-opener it’s been. You lot asked for a veg cookbook and, boy, have you enjoyed cooking from it. I’ve been blown away by the response on social – what a joy to see so many of you celebrating veg in all their glory. I hope the selection of recipes I’ve shared here will inspire you to keep cooking, and please do tag your festive feasts with #jamiesveg. I’ve rammed my new cookbook Veg full of incredible recipes, which I’ve designed to leave you feeling full, satisfied and like you’ve just been given a great big, comforting hug. From my Spiced parsnip soup to a showstopper Pithivier pie that will make everyone happy this Christmas, these dishes are a real treat for the tastebuds. If you’re after those extra-special festive trimmings, look no further; you can celebrate root veg in all its glory with my comforting Hasselback al forno, and we’ve got some epic party pieces in here, too. Speedy dough balls and Ploughman’s nachos, I’m looking at you. Now remember, just because it’s Christmas, cooking doesn’t have to be stressful. Planning ahead will not only save you time, it will allow you to wow your guests with brilliant food that just happens to be meat-free. Have faith that you’re in safe hands with these recipes – they’re guaranteed to impress. And, finally, don’t forget that the best part of Christmas is sharing it with those that matter the most to you. So gather your nearest and dearest, and here’s to some proper festive feasting packed full of flavour, joy and a whole lot of veg! Spiced parsnip soup Silky poppadoms & funky crisps. You can make this soup as chunky or as smooth as you like, and if you cook it a little drier, it makes a fantastic side dish as part of a bigger curry feast. David Loftus GET THE RECIPE Mushroom risotto Creamy parsley-spiked mascarpone. To make this mushroom risotto recipe vegetarian, swap Parmesan for vegetarian hard cheese. David Loftus GET THE RECIPE Hasselback al forno Root veg galore, wilted spinach, lentils & yoghurt ripple. Swapping out the lentils for borlotti, butter or cannellini beans, or even chickpeas, can be super-delicious – give it a try! David Loftus GET THE RECIPE Filo snake bake Spinach, olive & feta filling, lettuce & blood orange salad bites. As well as spinach in this dish, it’s really nice to use different greens, such as chard, dandelions, stinging nettles, watercress or rocket, soft herbs or even edible flowers. David Loftus GET THE RECIPE Pretty Persian-style rice Crispy saffron crust, herbs galore, pomegranate & smashed pistachios. This layering of rice is so exciting. Feel free to mix up your herbs and even swap out pomegranate for grilled peaches, apricots or figs. So tasty! David Loftus GET THE RECIPE Pithivier pie Golden pastry, celeriac, creamy leek, mushroom & blue cheese sauce. What could be more delicious? David Loftus GET THE RECIPE Vibrant bhel puri salad Popped rice, pomegranate, poppadoms & peanuts. This makes an exciting portable salad – put the dressing into the bottom of a container and layer the rest of the ingredients on top, then simply shake up just before eating. David Loftus GET THE RECIPE Speedy dough balls Smokin’ sweet pepper & chilli rippled cream cheese dip. Sometimes I flavour the dough with a little crumbled cheese and chopped herbs. David Loftus GET THE RECIPE Ploughman’ s nachos Flavoured butter, melty cheese & zingy pickled onions. Smashed up, these tasty bites make particularly good croutons for soup, or form the base of a fantastic ploughman’s salad with crunchy lettuce and cress.
