Whole baked harissa cauliflower Baking the cauliflower whole preserves its moisture, so the result is a beautifully tender showstopper. I love this dish simply paired with a cooked grain and greens. It looks pretty wow served with all the garnishes and is great for guests in need of a hearty dinner. Issy Croker GET THE RECIPE Lazy day pasta and garlic kale sauce A pinch of chilli and lemon zest really brings this to life. You could try adding another vegetable to the sauce if you don’t have, or like, mushrooms. Issy Croker GET THE RECIPE Roasted and smoked whole aubergine with greens and vegan aioli When using whole vegetables, it’s key to bring them to life with seasoning or sauces, and this aïoli really complements the succulent star of the show. Issy Croker GET THE RECIPE Baked split pea sweet potato and rosemary stew This recipe goes against the grain, quite literally, by baking split peas with sweet potatoes plus a subtle umami hit from the mushrooms. Issy Croker GET THE RECIPE Root vegetable celery thyme and butter bean chowder This is extremely adaptable. You can pretty much use any winter root vegetable you have, or whatever’s in season if you’re cooking it for a rainy summer’s evening instead. Batch cooking this is also a great idea, as it keeps well in the fridge and can be heated up on the stove whenever you want. Issy Croker GET THE RECIPE Celeriac steaks caper and parsley chimichurri Great for when you want to try something new but still with a sense of familiarity. The chimichurri gives a good kick to the steaks, and they’re beautifully charred on the outside and soft in the middle once cooked. Issy Croker GET THE RECIPE Apple and walnut any-flour Danish buns I find these buns one of the most therapeutic things to make. You pretty much can’t go wrong when making them, so long as you don’t overbeat the batter. They’re fluffy, light, wholesome, and with a surprising crunch from the walnuts. They work best when at least a quarter of the flour in the mix is white. This being said, I’ve tried this recipe with wholemeal and rye and they still rise perfectly. You could also try buckwheat flour, a malted blend, dark or light rye, the list goes on. Issy Croker GET THE RECIPE Garlic rice with caramelised onions and mushrooms Any mushrooms will work for this dish – it’s nice to mix them up and use a variety, but go with what you have or what’s in season. It’s a very simple dish that’s full of flavour, quick to make, without compromising. You can use whichever rice you like, making the most of what’s in your cupboard.
