The first UK lockdown saw a baking boom take place, causing an actual flour shortage that forced bakers to get creative with flourless recipes. However, one bake continued to reign supreme, and that was the humble banana bread. Getty Images Easy to make, a great way to use up those stockpiled overripe bananas and one of the most comforting things to eat, banana bread quickly became the bake of choice for amateur bakers everywhere. This time round though, with a bit of practice now under our belts and having been inspired by the current Great British Bake Off series, we’ve since graduated from novice bakers to budding star bakers and are looking further afield for some more inventive, creative and challenging bakes. Behold, the cinnamon roll. Another super comforting treat, cinnamon is often used in autumnal baking, making it perfect for this time of year. Making one from scratch can be a bit of a faff though, so if you want one quick, a cinnamon roll in a mug is the way to go. Getty Images Mug cakes aren’t a new concept, but a cinnamon roll in a mug might just be the novel bake you’ve been looking for. Minimum effort for maximum taste = genius. And it turns out everyone on Instagram and TikTok is making them, so there are plenty of recipes out there to inspire your next super quick microwave bake. Insta-foodie @fitwafflekitchen has created a delicious-looking recipe that we can’t wait to make. It requires 50g self raising flour and 60g Greek yoghurt to make the dough, 10g melted butter, 1 tbsp granulated sugar and 1/2 tsp cinnamon to make the filling and 3 tbsp powdered sugar and 2 tsp milk to make the icing.
