We love these banana fritters when we feel like a snack or eat them straight out of the frying pan with some ice cream melted over for dessert. Matt Russell 2019 SERVES 4 4 overripe bananas 120g soft brown sugar 1 tsp vanilla extract ½ tsp ground cinnamon ½ tsp freshly grated nutmeg 1 tsp baking powder ½ tsp salt 250g plain flour 80ml water vegetable oil, for shallow-frying 1. Mash the bananas in a bowl, add the sugar then mix together. Add the vanilla, cinnamon, nutmeg, baking powder and salt and mix together. Add the flour and water, then mix well until you have a thick consistency. 2. Pour enough vegetable oil for shallow-frying into a large frying pan over a high heat. Using a large spoon, carefully add spoonfuls of the mixture to the pan, flattening them slightly in the pan and fitting in as many as you can without overcrowding it (you will probably have to fry them in batches). 3. Turn the heat down to medium and fry the fritters for 3 minutes on each side until golden brown, then transfer to a plate lined with kitchen paper to drain off the excess oil. SERVE WITH ice cream, rum cream, drizzled with honey or just by themselves. VARIATION Use ripe plantain (so the ones with lots of black spots on the skin) or sweet jackfruit in place of banana. FLAVA TIP If you want a healthier option, use wholemeal flour and half the amount of sugar.
