He shares them here for the first time. Spicy fish soup with tomatoes & orange zest There are many versions of fish soup in the south of Italy, but this is my favourite – the flavour of the red mullet is unique. Ask your fishmonger to prepare the fish for you, but rinse it under cold water when you come to make the dish and run your fingers along each chunk, as red mullet has a lot of bones. Haarala Hamilton GET THE RECIPE Baked sliced potatoes with butter & fresh rosemary This potato recipe is tasty, looks impressive and can be made in the morning for that night, leaving you with more time with guests. It is a lovely substitute for traditional roast potatoes. It is also great as an alternative topping to a fish pie. Haarala Hamilton GET THE RECIPE One-pot roast chicken with pearl barley white wine & peas I love recipes that can be made in one pot as there is little mess or washing-up. A wide-based ovenproof frying pan can be used instead of a casserole dish and, if you prefer, swap the white wine for rosé. Haarala Hamilton GET THE RECIPE Oozing baked risotto with sausage leek & gorgonzola I love every kind of risotto and this one is fantastic. Try it with different cheeses; for example, you can substitute the gorgonzola for taleggio or dolcelatte, the parmesan for pecorino. If you don’t have red pesto in your cupboards (do buy some, it’s a great flavour!) don’t worry too much, it will still taste great. Haarala Hamilton GET THE RECIPE Grilled caramelised cod with honey garlic & balsamic vinegar If you are new to cooking fish, this is the perfect recipe to get you started. It will take minutes to prepare and very little can go wrong. I have used cod in this recipe for a light flavour, letting the marinade really stand out, but monkfish or salmon also work very well. Serve with new potatoes and a crispy salad. Haarala Hamilton GET THE RECIPE Spaghetti with crab lemon & white wine This is what a plate of pasta should be all about: simple, colourful and super-tasty. In the south of Italy you will find this dish in many restaurants near the sea. When I was a little boy, this was a real treat as crab is expensive. My mother would prepare crab exclusively at Christmas and this is the same recipe that she used to cook. Haarala Hamilton GET THE RECIPE Banoffee pie with amaretti biscuits My son Rocco loves this and often asked why it has never featured in one of my cookery books. I explained that it isn’t an Italian recipe, but he was so adamant that people should be able to make this that he convinced me to make a slight amendment by adding amaretti biscuits to the base.
