Emergency chocolate chip cookie There are times when nothing but a warm chocolate chip cookie will hit the spot. Bad day at work? Chocolate chip cookie. The end of a great day? Chocolate chip cookie. Thankfully this solitary biscuit, made with just a spatula and measuring spoons for true speed and simplicity, is there whenever the need arises. GET THE RECIPE Strawberry and mascarpone pots Not quite a trifle and not quite a tiramisu, this borrows from both. It was inspired by the dessert served at Da Enzo in Rome, a rich mascarpone cream topped with wild strawberries. Served in a tiny glass, it is the perfect end to a meal. GET THE RECIPE Individual tartes tatin The combination of crisp pastry and buttery caramelised apples can only be improved by adding a scoop of vanilla ice cream. These individual tarts would be a wonderful end to a date-night dinner, especially when you realise they’re not too difficult to make. GET THE RECIPE Pistachio raspberry and rose snack cake Perfect with a cup of tea – something citrusy, such as an Earl Grey. The cake isn’t too sugary, so I sometimes add a glaze to give it a sweet floral finish. GET THE RECIPE Biscoff-stuffed brownies I try not to keep jars of Biscoff spread in the house as a spoon magically appears in my hand, willing me to take a bite. So if I do have some in, I try to use it in something rather than letting it tempt me late at night. These brownies are my favourite use.
