Perfect for Mother’s Day – or any day. Flourless chocolate olive oil & almond cake Flourless chocolate cakes can often lean into a deeply fudgy, almost sticky texture, but this version still retains a bit of a cakey crumb that stays moist thanks to the ground almonds. It makes for a good celebration cake or a cosy dinner party pudding when only chocolate on chocolate on chocolate will do. Serve with a good splash of cold cream. Laura Edwards GET THE RECIPE Blueberry & lemongrass pavlova My pavlovas make regular appearances all year round and I simply switch up the topping to make use of what’s in season. Blueberry and lemongrass is a popular one, with its perfumed, citrussy aroma filling the kitchen as the compote bubbles away. For a more strongly fragranced flavour, let the lemongrass sit in the blueberries overnight. Laura Edwards GET THE RECIPE Cherry & coconut tahini cake Here, the pops of sweet cherries and the glug of tahini help keep this cake soft and moist with a crumbly, coconutty texture. Add a little cherry glaze for a burst of colour and this cake is a real delight. Buckwheat is a beautiful flour, bringing an earthy nuttiness and textural interest to whatever it gets incorporated into. If you’ve never baked with it before, these cookies are a good place to start. They’ve got just the right amount of chew, with a soft chocolatey interior – a keeper for the cookie jar. Laura Edwards GET THE RECIPE Raspberry yogurt honey cake This cake has summer garden party written all over it. It’s fresh and bright with a good tang from the yogurt and pops of bright raspberries in both the sponge and filling. I like to use a really delicate and floral honey here, but feel free to play around with your favourite varieties. Laura Edwards GET THE RECIPE Mint & lemon drizzle cake A classic lemon drizzle cake is pretty hard to beat. It’s got the perfect balance of sweet and sharp, and a soft, buttery crumb that gets drenched in lemony syrup. This version is all of those things but with some extra brightness and fragrance from a good handful of fresh mint. It’s such a simple twist but wins big on the flavour front. Laura Edwards GET THE RECIPE Rosemary & honey scones It’s hard to beat a fresh scone, still a little warm from the oven, smeared in clotted cream and devoured before you’ve had a chance to put the kettle on. The flecks of rosemary running through these add a warm, piney aroma that makes them feel a little fancy without doing much. Laura Edwards GET THE RECIPE Rhubarb ginger & white chocolate cake A wonderfully soft afternoon tea cake, warm with ginger and chunks of white chocolate snuggled around all the rhubarb. It can also double up as a pudding if served slightly warm with custard.
