Nassima Rothacker TAKES 30 MINUTES 1 large garlic clove, crushed 1 tbsp light soy sauce 1 tsp honey 150g sirloin steak 80g tenderstem broccoli 4 tsp vegetable oil 2 spring onions, sliced 125g prepared rice (see tip) Mix the garlic, soy and honey in a shallow container or resealable bag and add the steak, turning it in the marinade. Leave for 20 minutes at room temperature (or for up to 2-3 hours in the fridge, taking it out 20 minutes before cooking). Cut the broccoli into 4cm lengths and put in a mixing bowl. Cover with just-boiled water from the kettle and leave for 3 minutes, then drain and set aside. Heat 2 tsp oil in a medium frying pan or wok over a high heat. Lift the steak from the marinade (reserve the marinade) and sear for 1-2 minutes (depending on the thickness of the steak – aim for about 1 minute per cm) on each side. Seal on the fat side too if desired, then lift out of the pan and set aside to rest. Wipe any blackened bits out of the pan and add the remaining 2 tsp oil. Stir-fry the spring onions and broccoli for a minute, then add the rice and leftover marinade. Stir-fry for a minute more until piping hot. Tip on to a plate and serve with the sliced steak. TIP You’ll need a single portion of cold rice (long grain, wholegrain or basmati will all work) for this recipe. Either use leftovers or you can freeze cooked rice in single portions: place 125g rice in a sealable food bag and separate the grains a little before laying flat in the freezer. The rice can be cooked from frozen when needed.
