It was the most popular at the bakeries in Jabalpur: a light, eggless sponge with fresh cream and pineapple on top. I have tried to make it at home but it’s not the same. So I have made my own version, adding the pineapple to the cake and, since I have elderflower in my garden, I have incorporated it here to lend a summery, floral note. This cake is so light and refreshing that you might find it serves far fewer people than I say! Nassima Rothacker GET THE RECIPE Cherry almond and honey upside-down cake recipe Living in Kent I am very lucky to have an abundance of cherries in the season and, as much as I like to enjoy them as is, they are great in bakes too. This very delicately flavoured cake is a crowd-pleaser. Not only is it easy to make, it also somehow tastes of long summer evenings. Enjoy warm with a scoop of ice cream, or serve with crème fraîche. Here I use my favourite coriander chutney with the cheese, but feel free to add your chosen toppings. You can cook the breads a few hours in advance and grill with the cheese topping just before serving. In this recipe I use only potatoes, instead of mixed vegetables. The curry powder is the main flavour, marrying well with the coconut cream, while puff pastry is the perfect carrier for this delicious filling.
