Having said that, you could, of course, place this in a wholemeal bun, but just be ready with lots of paper napkins to wipe the guacamole off your fingers! Faith Mason SERVES 6 450g minced beef 4 jalapeño chillies, finely chopped 3 garlic cloves, finely chopped 3 tbsp tomato puree 1 tsp ground coriander salt side salad, to serve FOR THE GUACAMOLE 2 very ripe avocados ½ red onion, finely chopped 2 garlic cloves, finely chopped 1 green chilli, finely chopped juice of 1 lime salt 1. Place the minced beef, jalapeños, garlic, tomato purée, coriander and a good pinch of salt in a bowl and use your hands to mix together well. 2. Preheat the grill and line a baking tray with foil. Divide the meat mixture into 3 and form each portion into a burger patty. 3. Lay the burgers on the foil-lined tray, place under the grill and cook for 5–6 minutes on each side until cooked through. 4. Meanwhile, make the guacamole. Halve the avocados lengthways and remove the stones. Scoop the avocado flesh into a bowl and mash well with a fork. Add the remaining ingredients and mix together well, then season to taste with salt. 5. Serve the burgers topped with a huge dollop of guacamole, along with a generous side salad. NUTRITION NUGGET Avocados are not only trendy but very good for you, being a great source of oleic acid and vitamin E, which can both benefit heart health.
