Grilled cheese and kimchi open sandwich recipe A perfect mix of Eastern and Western flavours: bubbling cheese on toast with kimchi is a delicious update of my favourite cheddar and pickle sandwich. Often I stir in a couple of tablespoons of kimchi when I’ve fried the prawns. It was the era of ‘my body is a temple’ and this was temple food at its best – simple, pure and monastic. This is my version.
