Avocado Deviled Eggs Recipe
Avocado lovers won't be able to resist sinking their teeth into this finger food, which puts a creative spin on a classic crowd-pleaser (and just happens to be keto-friendly). 12 large eggs, hard-boiled2 avocados, halved and peeled, with pits removed3 limes, juiced2 tbsp fresh cilantroSalt and pepper, to taste1 tbsp pickled jalapeño, chopped (optional)Paprika, for garnish2 tbsp fresh chives, chopped, for garnish (optional)3 slices bacon, cooked and crumbled, for garnish (optional) Directions
Slice the eggs in half lengthwise, and place the yolks in a separate bowl.To the yolks, add the avocado, lime juice, cilantro, salt, pepper, and jalapeño (if using). Place in a blender or food processor and blend until smooth.Using a pastry bag, pipe the filling into each of the egg halves. (If you don’t have a pastry bag, cut the tip off of one corner of a plastic zip bag.)Garnish with paprika, chives, and bacon (if using). Refrigerate until serving.
