This hot kitchen contraption has the potential to shave several minutes off the cook time of some of your favorite recipes. Take these savory chicken thighs, which you can whip up in an hour or less, including prep time. Bonus: This family-friendly dinner is low-carb and high-fat, making it great for anyone on the ketogenic diet.Serves 4Prep time 10 minutesCook time 40 minutesTotal time 50 minutes Ingredients1 tsp olive oil4 boneless chicken thighs1 tbsp chicken seasoning, dividedSalt and pepper to taste1 cup low-sodium chicken broth1 cup whole milk4 cloves garlic, minced2 tbsp finely chopped sun-dried tomatoes2 ounces cream cheese¼ cup shredded Parmesan cheese3 cups spinach1 tsp cornstarch1 tsp cold waterFresh parsley for garnish (optional) DirectionsTurn the Instant Pot on sauté and allow to heat. Add the olive oil to the Instant Pot. Season the chicken with a small amount of chicken seasoning, salt, and pepper. Place the thighs into the Instant Pot and brown on each side, about 2–3 minutes per side.Add the chicken broth, milk, and remaining chicken seasoning to the pan. Cover and cook on manual/high pressure for 14 minutes, making sure the valve is turned to “sealing.”As soon as the Instant Pot stops cooking, release the pressure. Open the pot and remove the chicken to a covered plate to keep it warm.Add the garlic, tomatoes, cream cheese, and Parmesan to the Instant Pot mixture and stir to combine. Turn the Instant Pot to sauté mode and cook, stirring frequently, for 3–4 minutes until the cheese has melted.Add the spinach and stir until the spinach has wilted.In a small bowl, combine the cornstarch and water and then add it to the sauce in the Instant Pot. This will help thicken the sauce. Cook until sauce is the desired thickness, stirring frequently.Serve the sauce on top of the chicken. Garnish with parsley as desired.
