Low-calorie and rich in umami flavor, they’re one of the few nonmeat sources of vitamin D, and they're packed with other vitamins and minerals. A study published in Food Science & Nutrition in March 2021 found that just one 3 ounce (oz) serving of mushrooms per day was linked to an increase in dietary fiber, copper, phosphorus, potassium, selenium, zinc, riboflavin, niacin, choline, iron, thiamine, folate and vitamin B6, with no added calories, carbohydrates, fat, or sodium. Mushrooms make a great alternative to meat in a number of dishes. More than 2,000 mushroom varieties are edible, according to the Agricultural Marketing Resource Center, and each has a unique flavor profile. Large, meaty portobellos are a popular choice as vegetarian burgers and sliced to serve over pasta. Baby portobellos, also known as cremini mushrooms, are good for salads, omelets, and stuffings. How to Cut a Portobello MushroomGently wipe the mushroom cap with a damp cloth to clean it.Using your hands, carefully remove the stem.Using a spoon, gently remove the dark gills from the underside of the mushroom cap and discard.Set the mushroom cap on the end where the stem was and cut it in half.Turn 90 degrees and slice into ⅛- to ¼-thick slices.
