Ingredients

2 cups whole-wheat flour 1 teaspoon baking powder 1/4 cup flaxseed meal (flaxseed flour) 1/2 teaspoon baking soda 1/4 cup millet meal (millet flour) 1 teaspoon caraway seed, crushed 2 tablespoons wheat gluten 1/4 teaspoon kosher salt 1 1/4 cup low-fat buttermilk or skim milk 2 egg whites

Directions

Heat oven to 350 F. In a large bowl, sift together dry ingredients. In a separate bowl, combine milk and egg whites. Mix well. Add milk and egg mixture to dry ingredients. Mix until well-moistened. Lightly grease the bottom of a 5-by-8-inch loaf pan. Place the dough in the pan. Using a sharp knife, make a slash in the dough lengthwise, about 1/4 inch deep. Bake for 50 to 60 minutes. To test for doneness, insert a skewer or knife into the center of the loaf. It should come out clean. Cool thoroughly on a rack before slicing.
