A scenario where this is best used is when you have multiple email accounts, but you don't receive mail on some of them. Maybe you have one that's used only to forward messages to other accounts, and you don't need full access to it, but you want to send mail from it. How to Send From Different Email Accounts

Configure macOS Mail to use multiple email addresses: Launch the Mail application on your Mac by clicking its icon in the Dock. From Mail in the menu bar, select Preferences. Click the Accounts tab at the top of the Mail General preferences screen. Select the desired account you want to have multiple From addresses associated with by clicking the account name in the left panel. In the Email Address field, select Edit Email Addresses and then enter all the email addresses you want to be able to use with this account. Exit the Accounts preferences screen. You can now send mail from any of the email addresses you set up.

How to Select a From Email Address in Mail

To choose which of the addresses to use with an email, click the From field. If you don't see the From option: Open a new email in the Mail application. Click in the From address field and click the arrows at the right side of the field to open a drop-down menu that lists all the addresses you entered for the account.
